What’s in a coconut energy ball?

We’ve got all the delicious flavors of a classic energy ball in these coconut balls, but with a few extras to make them even more nutritious and filling. The ingredients are all superfoods, with the addition of maca powder for more energy, chromium for better blood sugar control, and protein to help you feel fuller longer. We’ve also added some healthy fats, which are great for slowing down the rate at which our blood sugar is released.

The coconut is also very high in medium-chain triglycerides (MCTs), which are digested very quickly, rather than long-chain triglycerides (LCTs), which are digested more slowly, so they are great for a quick energy boost. And last but not least, we’ve added a little cinnamon because pfft, why not.

How to make coconut energy ball?

We started by blending all the ingredients together in a high-speed blender, then we rolled them into balls using a spoon. The only major difference is that we used most of the batter to make balls, which meant that there weren’t as many blueberry pieces left at the end.

To make these coconut balls vegan, simply swap the beef gelatin for ghee or coconut butter. If you’d like to add some extra protein and healthy fats, feel free to add in some seeds as well.

We recommend storing these coconut balls in an airtight container in the fridge. They’ll stay super fresh and are equally delicious at room temperature or cold. Coconut balls taste best when they’re kept chilled, but they’re still edible after a few hours if they’re kept in the fridge.
