Butternut Squash Noodle Stir Fry – Most Healthy and Easily Made

This is a simple and quick butternut squash noodle stir fry recipe that you can make in less than half an hour. It’s one of my favorite side dishes because it’s loaded with protein, fiber, and vitamins. It’s also low in carbs and calories. All you need to do is add vegetables of your choice, along with some beef or chicken, and you have yourself a complete healthy meal that will leave you feeling satisfied yet hungry again minutes later.

My favorite way to eat this easy noodle recipe is as a side dish for steak or chicken dishes. Butternut squash noodles are also great for adding bulk to soups or stews. You can even try this stir fry over rice if you like it that way the noodles will be more discrete.

How to make Butternut Squash Noodle Stir Fry

You will need: 2 Butternut Squash Or Acorn Squash – Any kind – Any kind 2 eggs 2 Tablespoons Oil 2 White Or Brown Onions – Chopped 1/4 Cup Ginger – Grated 4-6 Garlic Cloves – Whole Or Grated 1/4 Cup Sugar 1/4 Teaspoon Salt 1/4 Teaspoon Black Pepper 1/4 Cup Stock Or Broth 1/4 Cup Water 2-3 tablespoons soy sauce 2-3 tablespoons rice vinegar 2-3 tablespoons water 1 tablespoon corn starch 1/4 teaspoon baking powder

How to cook Butternut Squash Noodle Stir Fry

1. Wash and dry the potatoes. Cut them into half-inch cubes and place them in a large saucepan with 2-3 cups of water. Salt the water and bring it to a boil. Reduce the heat to low and cook the potatoes until they are very tender, about 15-20 minutes.

2. While the potatoes are cooking, make the sauce. In a bowl, mix together the eggs, oil, white onions, ginger and garlic. Set aside.

3. Once the potatoes are cooked, drain them and return them to the pot with 1/4 cup of the reserved cooking water. Add the sugar, salt, pepper, stock, soy sauce, rice vinegar, water, corn starch and baking powder and mix until well-combined.

4. Once the vegetables are cooked, add the meat and any optional ingredients like vegetables from the side dish, peanuts or roasted sweet potatoes.

5. Serve the stir fry with steamed green or brown rice.
